Whole Wheat Gingerbread Pancakes

Ingredients
Wet Ingredients:
- 2 Eggs
- ¼ cup Molasses
- 1 ¼ Cups Buttermilk
- 1 Cup plain Greek yogurt
Dry Ingredients:
- 2 Cups White Whole-Wheat Flour
- ½ Tablespoon baking powder
- ½ Teaspoon Baking Soda
- ½ Teaspoon Salt
- 1 Teaspoon Ground Ginger
- 1 Teaspoon Cinnamon
- ½ Teaspoon Nutmeg
- ¼ Teaspoon Allspice
For Cooking & Serving:
- 4 Tablespoons Butter
- Maple syrup for serving
Instructions
- In a large mixing bowl, whisk to combine the wet ingredients: eggs, molasses, buttermilk, and Greek yogurt.
- In a separate bowl, mix together all the dry ingredients: flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and allspice.
- Slowly add the dry mixture to the wet mixture. Gently whisk just until they are combined. (A few lumps are perfectly fine, but overmixing can make the pancakes tough!)
- Heat 1 tablespoon of butter in a large skillet or griddle over medium-low heat.
- For each pancake, add about 1/3 cup of batter to the skillet, leaving space between them. Cook until the edges look set and little air bubbles begin to form and pop on the surface (this usually takes 3-5 minutes).
- Carefully flip the pancakes and cook for another 3-5 minutes, until golden brown and cooked through.
- Add another tablespoon of butter to the skillet in between batches and repeat until all the batter is used.
- Serve warm with a generous drizzle of maple syrup and any other toppings you enjoy
