Ingredients:

Makes: 8-12 cookies depending on preferred size

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup chocolate chips, raisins, or chopped nuts (optional)

Instructions:

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • Mix Ingredients: In a mixing bowl, mash the ripe bananas using a fork until smooth. Add the rolled oats to the mashed bananas and mix well until all the oats are coated and a dough forms. If desired, fold in chocolate chips, raisins, or chopped nuts for extra flavor.
  • Form Cookies: Using a spoon or your hands, scoop out about 1-2 tablespoons of the oat and banana mixture and shape it into a small cookie. Place the cookies onto the prepared baking sheet, leaving a little space between each one.
  • Bake: Place the baking sheet in the preheated oven and bake the cookies for 12-15 minutes, or until the edges are golden brown and the cookies are set.
  • Cool: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
  • Enjoy: Once the cookies have cooled, enjoy them as a healthy and delicious snack or breakfast option.

Storage:

Store any leftover cookies in an airtight container at room temperature for up to 3 days. You can also freeze the cookies by individually wrapping them in plastic wrap or aluminum foil and placing them in an airtight freezer bag for up to 2 months.
